Baby Aubergines are a wonderful addition to many dishes, and can be deliciously roasted to be served alongside meat, such as lamb. Conventinetely, the Aubergines can be cooked a day ahead or in the morning, then reheated to serve. Additionally, they soak up flavours, which allows them to be combined with many other ingredients, and the thick texture makes a good alternative to meat in vegetarian dishes.
